Try it out!
For the cake:
- 225g butter softened
- 225g caster sugar
- 275g self raising flour
- 1 tsp milk
- 4 eggs
- 1 tsp baking powder
- Juice and finely grated zest of 3 lemons
For the drizzle:
- Juice of 3 lemons
- Juice of 1 lime
- 2 tsp granulated sugar
- 1 tbsp golden syrup
Preheat the oven to 180C (160C fan oven). Grease an 8” square baking tray with butter, and line with parchment paper.
Mix together all the cake ingredients until smooth adding lemon juice last.
Pour into the baking tray and bake for about 35 minutes.
To make the drizzle, heat the lemon and lime juice, sugar and golden syrup in a pan, stirring constantly until smooth.
Take the cake out of oven and whilst still hot pour on the drizzle - it will sink giving the cake moisture and leaving a crunchy topping.
Cut into small squares and serve with fresh cream or ice cream.
